During the summer, the difference between the heat of day and cool nights increases aromas in the skins of the grapes and ensure a fascinating variety distinctive of local structured and complex wines,
perfect for ageing.


The tannins typical of these grand wines also contribute to their constant fascination. The soil of the Langhe is made of a substrate of clay, calcareous marl, blue marl, tufa, sand and sulphur-bearing chalk. These substances are to be found in alternating layers, giving the area’s wines their structure and finesse.
“Precision viticulture,” (the practice of reduced and carefully controlled production) is employed, aiming at the provision of only the highest quality wines in order to satisfy the demands of discerning private consumers, as well as professional stakeholders that include importers and restaurateurs. These wines are quintessentially of Langhe terroir: Dolcetto d’Alba, Barbera d’Alba, Nebbiolo, Barbaresco, and Barolo, as well as two white wines: Moscato d’Asti and Langhe Arneis. The excellent position of the vineyards coupled with careful attention to the techniques of vinification guarantee the production of pure and noble wines.

IT IS ELIO’S AMBITION TO PRODUCE BARBARESCO RISERVA’S
Through the use of expert oenologists, laboratory tests are employed to determine the precise timing of the grape harvest depending on the varietal, to ensure the highest quality production. Although the cellar has undergone two important renovations and extensions since 1997, having to do with grape processing, fermentation, ageing and bottling, construction began last fall, leading to the creation of a new two-story production facility, including a lower floor for bottle storage and an upper floor for placement of barriques.
It is Elio’s ambition to produce Barbaresco Riserva’s of 5, 10 and even 15 years. At the present time, the Barbaresco Riserva 2012 (5 years) and 2007 (10 years) can be appreciated. The precious 15 year Barbaresco Riserva 2006 will be released in the Spring of 2021.
Under Elio’s stewardship, the winery continues to practice as many traditional and natural methods as possible without using chemical fertilizers or herbicides.
To this end, the vineyard grass is cut by hand, and only natural bovine or equine fertilizers are applied
in alternate years.
